Eton Mess

Instructions:

  1. In a medium bowl, beat 2 cups of heavy cream with an electric mixer until soft peaks form.
  2. Add 1/4 cup of powdered sugar and 1 tsp of vanilla extract. Beat until stiff peaks form.
  3. In a separate bowl, mix together the diced strawberries, 1/4 cup of granulated sugar, and 1 tsp of lemon juice.
  4. Using a spatula, gently fold the strawberries into the whipped cream mixture.
  5. Add 3 cups of broken meringue cookies and gently fold into the mixture.
  6. Spoon the Eton Mess into serving dishes and top with extra strawberries and meringue pieces, if desired.
  7. Serve immediately and enjoy!
