Escabeche
Ingredients:
- 1 whole fish (tilapia or red snapper)
- 1 cup vinegar
- 1 cup water
- 1 onion, sliced
- 1 bell pepper, sliced
- 1 carrot, sliced
- 1/4 cup cooking oil
- 1 tbsp sugar
- 2 cloves garlic, minced
- Salt and pepper to taste
Instructions:
- Clean and slice the fish into serving pieces.
- In a separate bowl, mix together the vinegar, water, sugar, and garlic. Set aside.
- In a pan, heat the cooking oil and fry the fish until golden brown. Remove from pan and set aside.
- In the same pan, sauté the onions, bell pepper, and carrots until slightly soft.
- Add the vinegar mixture into the pan and let it simmer for 2 minutes.
- Season with salt and pepper to taste.
- Arrange the fried fish in a serving dish and pour the vinegar mixture over the fish.
- Let it marinate for at least an hour before serving.
