Escabeche

  1. Clean and slice the fish into serving pieces.
  2. In a separate bowl, mix together the vinegar, water, sugar, and garlic. Set aside.
  3. In a pan, heat the cooking oil and fry the fish until golden brown. Remove from pan and set aside.
  4. In the same pan, sauté the onions, bell pepper, and carrots until slightly soft.
  5. Add the vinegar mixture into the pan and let it simmer for 2 minutes.
  6. Season with salt and pepper to taste.
  7. Arrange the fried fish in a serving dish and pour the vinegar mixture over the fish.
  8. Let it marinate for at least an hour before serving.
