English Muffins

  1. In a large mixing bowl, combine the flour, salt, sugar, and yeast.
  2. In a separate bowl, mix together the warm water, milk, and melted butter.
  3. Add the wet ingredients to the dry ingredients and mix until a soft dough forms.
  4. Knead the dough on a floured surface for about 5 minutes.
  5. Place the dough in a greased bowl, cover with a kitchen towel, and let it rise for about an hour, or until doubled in size.
  6. Punch down the dough and divide it into 8 equal pieces.
  7. Roll each piece into a ball and then flatten it into a disc.
  8. Place the discs on a baking sheet sprinkled with cornmeal.
  9. Cover and let them rise for another 30 minutes.
  10. Preheat a skillet over medium heat and lightly grease it.
  11. Carefully transfer the risen dough discs to the skillet and cook for about 5 minutes on each side, until golden brown.
  12. Remove from the skillet and let cool before serving.
