English Muffins
Ingredients:
- 2 cups all-purpose flour
- 1 teaspoon salt
- 1 tablespoon sugar
- 1 tablespoon active dry yeast
- 1 cup warm water
- 1/2 cup milk
- 2 tablespoons unsalted butter, melted
- Cornmeal for dusting
Instructions:
- In a large mixing bowl, combine the flour, salt, sugar, and yeast.
- In a separate bowl, mix together the warm water, milk, and melted butter.
- Add the wet ingredients to the dry ingredients and mix until a soft dough forms.
- Knead the dough on a floured surface for about 5 minutes.
- Place the dough in a greased bowl, cover with a kitchen towel, and let it rise for about an hour, or until doubled in size.
- Punch down the dough and divide it into 8 equal pieces.
- Roll each piece into a ball and then flatten it into a disc.
- Place the discs on a baking sheet sprinkled with cornmeal.
- Cover and let them rise for another 30 minutes.
- Preheat a skillet over medium heat and lightly grease it.
- Carefully transfer the risen dough discs to the skillet and cook for about 5 minutes on each side, until golden brown.
- Remove from the skillet and let cool before serving.
