Energy Bars

  1. Preheat your oven to 350°F (175°C) and line a baking dish with parchment paper.
  2. In a large mixing bowl, combine the almond flour, rolled oats, honey, almond butter, dried cranberries, chopped almonds, and vanilla extract. Mix well until all ingredients are evenly distributed.
  3. Press the mixture into the prepared baking dish, making sure it is spread out evenly and compacted tightly.
  4. Bake for 20-25 minutes, or until the top is lightly golden brown.
  5. Remove from the oven and let it cool for 10 minutes. Then, using the parchment paper, lift the bars out of the dish and place them on a cutting board.
  6. Cut the bars into desired size and shape.
  7. Store the bars in an airtight container in the fridge for up to a week or in the freezer for longer storage.
