Endive Salad
Ingredients:
- 2 heads of endive
- 1 cup cherry tomatoes, halved
- 1/2 cup crumbled feta cheese
- 1/4 cup chopped walnuts
- 1/4 cup dried cranberries
- 1/4 cup balsamic vinaigrette dressing
Instructions:
- Wash and dry endive heads. Cut off the tough bottom stems and discard them
- Separate the leaves of the endive and place them in a large salad bowl
- Add the halved cherry tomatoes, crumbled feta cheese, chopped walnuts, and dried cranberries to the salad bowl
- Drizzle balsamic vinaigrette dressing over the salad and give it a toss to mix all the ingredients together
- Serve and enjoy your delicious endive salad!
