Enchiladas

  1. Preheat your oven to 350°F.
  2. In a large pan, cook the ground beef and onion over medium heat until the beef is fully cooked. Drain any excess fat.
  3. Stir in the enchilada sauce and green chilies into the beef mixture. Cook for another 5 minutes, then remove from heat.
  4. In a separate bowl, mix together the sour cream and 1 cup of shredded cheese. Set aside.
  5. Warm the tortillas in the microwave for about 30 seconds, or until they are soft and pliable.
  6. Spread a thin layer of the beef mixture onto each tortilla and top with a spoonful of the sour cream and cheese mixture. Roll up the tortilla and place it seam side down in a greased 9x13 inch baking dish.
  7. Repeat with the remaining tortillas and filling.
  8. Spread any remaining beef mixture over the top of the enchiladas. Sprinkle the remaining shredded cheese on top.
  9. Bake for 20 minutes, or until the cheese is melted and bubbly.
  10. Serve hot and enjoy your delicious homemade enchiladas!
