Enchiladas
Ingredients:
- 8 flour tortillas
- 1 pound ground beef
- 1 onion, chopped
- 1 can (28 oz) enchilada sauce
- 1 can (4 oz) chopped green chilies
- 1/2 cup sour cream
- 2 cups shredded cheese
- salt and pepper, to taste
Instructions:
- Preheat your oven to 350°F.
- In a large pan, cook the ground beef and onion over medium heat until the beef is fully cooked. Drain any excess fat.
- Stir in the enchilada sauce and green chilies into the beef mixture. Cook for another 5 minutes, then remove from heat.
- In a separate bowl, mix together the sour cream and 1 cup of shredded cheese. Set aside.
- Warm the tortillas in the microwave for about 30 seconds, or until they are soft and pliable.
- Spread a thin layer of the beef mixture onto each tortilla and top with a spoonful of the sour cream and cheese mixture. Roll up the tortilla and place it seam side down in a greased 9x13 inch baking dish.
- Repeat with the remaining tortillas and filling.
- Spread any remaining beef mixture over the top of the enchiladas. Sprinkle the remaining shredded cheese on top.
- Bake for 20 minutes, or until the cheese is melted and bubbly.
- Serve hot and enjoy your delicious homemade enchiladas!
