Empanadas
Ingredients:
- 2 cups all-purpose flour
- 1/4 cup cold water
- 1/4 cup cold butter, cubed
- 1/4 cup cold lard
- 1 teaspoon salt
- 1 egg, beaten
- 1 tablespoon vinegar
- 1 pound ground beef or pork
- 1 onion, diced
- 1 green bell pepper, diced
- 2 cloves garlic, minced
- 1/4 cup tomato sauce
- 1/4 cup green olives, chopped
- 1/4 cup raisins
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- Salt and pepper to taste
- 1 egg, beaten (for egg wash)
Instructions:
- In a large mixing bowl, combine flour, salt, butter, and lard. Mix until mixture resembles coarse crumbs.
- In a small bowl, mix together the beaten egg and vinegar. Slowly add to the flour mixture and mix until dough comes together. If needed, add small amounts of water until dough is firm. Knead the dough on a floured surface for a few minutes until smooth. Cover with plastic wrap and refrigerate for 30 minutes.
- In a large skillet, cook the ground beef or pork over medium heat until browned. Add onions, bell pepper, and garlic and continue cooking until vegetables are softened. Stir in tomato sauce, olives, raisins, cumin, paprika, and chili powder. Simmer for 10 minutes, then remove from heat and
