Elote (Mexican Street Corn)
Ingredients:
- 4 ears of corn, husked
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1/4 cup cotija cheese, crumbled
- 1/4 cup cilantro, chopped
- 2 cloves of garlic, minced
- 1 lime, juiced
- 1 teaspoon chili powder
- Salt and pepper, to taste
Instructions:
- Preheat grill to medium-high heat.
- Grill the corn, turning occasionally, until kernels are slightly charred, about 10 minutes.
- While the corn is grilling, mix together the mayonnaise, sour cream, cotija cheese, cilantro, garlic, lime juice, chili powder, salt, and pepper in a bowl.
- Remove the corn from the grill and brush the mixture onto the corn, coating it evenly on all sides.
- Serve immediately, garnished with extra cotija cheese, cilantro, and lime wedges if desired.
