Elote (Mexican Street Corn)

  1. Preheat grill to medium-high heat.
  2. Grill the corn, turning occasionally, until kernels are slightly charred, about 10 minutes.
  3. While the corn is grilling, mix together the mayonnaise, sour cream, cotija cheese, cilantro, garlic, lime juice, chili powder, salt, and pepper in a bowl.
  4. Remove the corn from the grill and brush the mixture onto the corn, coating it evenly on all sides.
  5. Serve immediately, garnished with extra cotija cheese, cilantro, and lime wedges if desired.
