Elderflower Cordial
Ingredients:
- 1 cup elderflowers, stems removed
- 2 cups water
- 1 lemon, sliced
- 1 cup granulated sugar
- 1 tablespoon citric acid
- 1 vanilla bean, split
- additional water, for diluting
Instructions:
- In a saucepan, combine elderflowers, water, lemon slices, and sugar. Bring to a boil over medium-high heat, then reduce heat and let simmer for 5 minutes.
- Remove from heat and stir in citric acid and vanilla bean. Let cool for 30 minutes.
- Strain mixture through a fine mesh sieve into a clean jar or bottle. Use a spoon to gently press on the solids to extract all the liquid.
- To serve, mix one part elderflower cordial with three parts water. Adjust ratio to taste.
- Cordial can be stored in the refrigerator for up to 2 weeks.
