Egg Salad
Ingredients:
- 6 hard-boiled eggs
- 1/4 cup mayonnaise
- 1 tsp Dijon mustard
- 1 stalk celery, chopped
- 1/4 cup red onion, diced
- 2 tbsp fresh parsley, chopped
- Salt and pepper to taste
- Optional: 1/4 cup diced peppers or pickles for added crunch
Instructions:
- Peel and chop hard-boiled eggs.
- In a separate bowl, mix together mayonnaise, Dijon mustard, celery, red onion, parsley, and optional ingredients.
- Add chopped eggs to the mixture and stir until well combined.
- Season with salt and pepper to taste.
- Serve on bread, crackers, or lettuce leaves for a delicious egg salad sandwich or wrap.
