Egg Fried Rice

Instructions:

  1. Cook the rice according to package instructions and set aside.
  2. In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
  3. Add beaten eggs to the skillet and scramble until fully cooked. Remove eggs from the skillet and set aside.
  4. Add remaining 1 tablespoon of vegetable oil to the skillet and sauté diced onion and carrots for 2-3 minutes.
  5. Add peas to the skillet and continue to sauté for another 2-3 minutes.
  6. Add cooked rice to the skillet and mix in with the vegetables.
  7. Pour soy sauce over the rice and mix until evenly coated.
  8. Add the scrambled eggs back to the skillet and mix until fully incorporated. Cook for an additional 2-3 minutes.
  9. Season with salt and pepper to taste.
  10. Serve hot and enjoy your delicious egg fried rice!
