Egg Fried Rice
Ingredients:
- 1 cup uncooked rice
- 2 eggs, beaten
- 1/4 cup onion, diced
- 1/4 cup carrots, diced
- 1/4 cup peas
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- Salt and pepper, to taste
Instructions:
- Cook the rice according to package instructions and set aside.
- In a large skillet, heat 1 tablespoon of vegetable oil over medium-high heat.
- Add beaten eggs to the skillet and scramble until fully cooked. Remove eggs from the skillet and set aside.
- Add remaining 1 tablespoon of vegetable oil to the skillet and sauté diced onion and carrots for 2-3 minutes.
- Add peas to the skillet and continue to sauté for another 2-3 minutes.
- Add cooked rice to the skillet and mix in with the vegetables.
- Pour soy sauce over the rice and mix until evenly coated.
- Add the scrambled eggs back to the skillet and mix until fully incorporated. Cook for an additional 2-3 minutes.
- Season with salt and pepper to taste.
- Serve hot and enjoy your delicious egg fried rice!
