Egg Drop Soup
Ingredients:
- 4 cups chicken broth
- 2 eggs
- 1/4 cup thinly sliced green onions
- 1/4 cup sliced mushrooms
- 1 tablespoon cornstarch
- 1 tablespoon cold water
- 1/2 teaspoon soy sauce
- 1/4 teaspoon ground ginger
- Salt and pepper to taste
Instructions:
- In a saucepan, bring chicken broth to a boil.
- In a separate bowl, whisk together eggs and green onions.
- Add sliced mushrooms to the boiling broth and let cook for 2 minutes.
- Slowly pour in the egg mixture, stirring gently to create ribbons of cooked egg.
- In a small bowl, mix together cornstarch and cold water until smooth.
- Stir in the cornstarch mixture, soy sauce, and ginger to the soup. Let simmer for 2-3 minutes.
- Season with salt and pepper to taste.
