Eclairs
Ingredients:
- 1 cup water
- 1/2 cup unsalted butter
- 1/4 teaspoon salt
- 1 cup all-purpose flour
- 4 eggs
- 1 1/2 cups heavy cream
- 1/3 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/4 cup unsalted butter
- 2/3 cup semisweet chocolate chips
Instructions:
- In a large saucepan, bring water, butter, and salt to a rolling boil.
- Add flour all at once and stir vigorously until mixture forms a ball.
- Remove from heat and let cool for 5 minutes.
- Beat in eggs, one at a time, until mixture is smooth and glossy.
- Preheat oven to 400 degrees F (200 degrees C).
- Transfer mixture to a pastry bag or a resealable plastic bag with the corner snipped off.
- Pipe 6 inch lengths onto a lined baking sheet.
- Bake for 30 minutes, or until golden brown.
- Remove from oven and let cool.
- In a medium saucepan, heat heavy cream, sugar, and vanilla until simmering.
- Remove from heat and whisk in butter until melted.
- Let cool and then refrigerate until chilled.
- Cut cooled eclairs horizontally and fill with creamy mixture.
- In a microwave-safe bowl, melt chocolate chips in 30 second intervals, stirring in between, until smooth.
