Eclairs

Instructions:

  1. In a large saucepan, bring water, butter, and salt to a rolling boil.
  2. Add flour all at once and stir vigorously until mixture forms a ball.
  3. Remove from heat and let cool for 5 minutes.
  4. Beat in eggs, one at a time, until mixture is smooth and glossy.
  5. Preheat oven to 400 degrees F (200 degrees C).
  6. Transfer mixture to a pastry bag or a resealable plastic bag with the corner snipped off.
  7. Pipe 6 inch lengths onto a lined baking sheet.
  8. Bake for 30 minutes, or until golden brown.
  9. Remove from oven and let cool.
  10. In a medium saucepan, heat heavy cream, sugar, and vanilla until simmering.
  11. Remove from heat and whisk in butter until melted.
  12. Let cool and then refrigerate until chilled.
  13. Cut cooled eclairs horizontally and fill with creamy mixture.
  14. In a microwave-safe bowl, melt chocolate chips in 30 second intervals, stirring in between, until smooth.
