Easter Cookies

  1. In a large bowl, cream together the butter and sugar until light and fluffy.
  2. Add in the eggs one at a time, mixing well after each addition.
  3. Stir in the vanilla extract.
  4. In a separate bowl, mix together the flour, baking powder, and salt. Gradually add this mixture to the butter mixture until well combined.
  5. Stir in the white chocolate chips.
  6. Cover the dough and refrigerate for at least an hour.
  7. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  8. Using a cookie scoop or spoon, form the dough into small balls and place them on the prepared baking sheet.
  9. Bake for 8-10 minutes, until the edges are lightly golden.
  10. Remove from the oven and let the cookies cool for a few minutes before transferring them to a wire rack to cool completely.
  11. Once cooled, decorate the cookies with Easter themed sprinkles.
