Easter Cookies
Ingredients:
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup white chocolate chips
- Easter themed sprinkles, for decorating
Instructions:
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add in the eggs one at a time, mixing well after each addition.
- Stir in the vanilla extract.
- In a separate bowl, mix together the flour, baking powder, and salt. Gradually add this mixture to the butter mixture until well combined.
- Stir in the white chocolate chips.
- Cover the dough and refrigerate for at least an hour.
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Using a cookie scoop or spoon, form the dough into small balls and place them on the prepared baking sheet.
- Bake for 8-10 minutes, until the edges are lightly golden.
- Remove from the oven and let the cookies cool for a few minutes before transferring them to a wire rack to cool completely.
- Once cooled, decorate the cookies with Easter themed sprinkles.
