Dutch Split Pea Soup Recipe
Ingredients:
- 1 pound dried split peas
- 8 cups water
- 1 ham hock
- 1 onion, chopped
- 1 carrot, diced
- 1 celery stalk, diced
- 1 leek, chopped
- 2 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon dried thyme
- 1 teaspoon dried savory
- Salt and pepper to taste
- 1 cup diced cooked ham
- 1 tablespoon chopped fresh parsley
Instructions:
- In a large pot, combine the dried split peas, water, and ham hock. Bring to a boil over high heat. Reduce heat to low and let simmer for 1 hour, stirring occasionally.
- While the peas are cooking, sauté the chopped onion, carrot, celery, leek, and garlic in a separate pan until softened.
- Add the sautéed vegetables to the pot with the peas, along with the bay leaf, thyme, savory, salt, and pepper.
- Simmer for an additional 30 minutes, or until the peas are soft and the soup has thickened.
- Remove the ham hock and cut the meat into small pieces. Add the diced ham back into the soup and let cook for another 10 minutes.
- Stir in the chopped fresh parsley and let cook for an additional 5 minutes.
