Dutch Split Pea Soup Recipe

  1. In a large pot, combine the dried split peas, water, and ham hock. Bring to a boil over high heat. Reduce heat to low and let simmer for 1 hour, stirring occasionally.
  2. While the peas are cooking, sauté the chopped onion, carrot, celery, leek, and garlic in a separate pan until softened.
  3. Add the sautéed vegetables to the pot with the peas, along with the bay leaf, thyme, savory, salt, and pepper.
  4. Simmer for an additional 30 minutes, or until the peas are soft and the soup has thickened.
  5. Remove the ham hock and cut the meat into small pieces. Add the diced ham back into the soup and let cook for another 10 minutes.
  6. Stir in the chopped fresh parsley and let cook for an additional 5 minutes.
