Dutch Baby Pancake

  1. Preheat your oven to 425°F.
  2. In a large cast iron or oven-safe skillet, melt the butter in the oven for about 5 minutes.
  3. In a medium-sized bowl, whisk together the eggs, flour, milk, sugar, salt, and vanilla extract until smooth.
  4. Remove the skillet from the oven and pour the batter into the hot melted butter.
  5. Bake for 15-20 minutes, until the pancake is puffed and golden brown.
  6. Remove from the oven and sift the confectioners' sugar over the top of the pancake.
  7. Serve immediately, topped with fresh berries if desired.
