Dulce de Leche Cheesecake

  1. Preheat the oven to 350 degrees F. Grease a 9-inch springform pan.
  2. In a small bowl, mix together graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of the prepared pan.
  3. In a large mixing bowl, beat cream cheese until smooth. Add dulce de leche and continue to beat until well combined.
  4. Add eggs, one at a time, beating well after each addition. Mix in heavy cream, vanilla extract, and salt until the mixture is smooth and creamy.
  5. Pour the cheesecake mixture into the prepared crust and smooth out the top with a spatula.
  6. Bake for 40-45 minutes, or until the edges are set and the center is still slightly jiggly.
  7. Turn off the oven and leave the cheesecake in the oven for 1 hour with the door slightly ajar.
  8. Remove the cheesecake from the oven and cool on a wire rack for 1 hour. Chill in the refrigerator for at least 4 hours before serving.
  9. Drizzle additional dulce de leche over the top of the cheesecake before serving
