Dulce de Leche Cheesecake
Ingredients:
- 1 1/2 cups graham cracker crumbs
- 1/4 cup granulated sugar
- 1/4 cup unsalted butter, melted
- 3 (8-ounce) packages cream cheese, softened
- 1 cup dulce de leche
- 3 large eggs
- 1/4 cup heavy cream
- 1 teaspoon vanilla extract
- 1/2 teaspoon salt
Instructions:
- Preheat the oven to 350 degrees F. Grease a 9-inch springform pan.
- In a small bowl, mix together graham cracker crumbs, sugar, and melted butter until well combined. Press the mixture into the bottom of the prepared pan.
- In a large mixing bowl, beat cream cheese until smooth. Add dulce de leche and continue to beat until well combined.
- Add eggs, one at a time, beating well after each addition. Mix in heavy cream, vanilla extract, and salt until the mixture is smooth and creamy.
- Pour the cheesecake mixture into the prepared crust and smooth out the top with a spatula.
- Bake for 40-45 minutes, or until the edges are set and the center is still slightly jiggly.
- Turn off the oven and leave the cheesecake in the oven for 1 hour with the door slightly ajar.
- Remove the cheesecake from the oven and cool on a wire rack for 1 hour. Chill in the refrigerator for at least 4 hours before serving.
- Drizzle additional dulce de leche over the top of the cheesecake before serving
