Duck Pate
Ingredients:
- 1 whole duck
- 1 tbsp olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1/4 cup brandy
- 1/4 cup heavy cream
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Clean the duck and remove any excess fat.
- Season the duck with salt and pepper inside and out.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
- Stir in the dried thyme and rosemary.
- Add the seasoned duck to the skillet and cook until browned on all sides.
- Remove the duck from the skillet and place it in a roasting pan.
- Pour the brandy over the duck and place it in the preheated oven.
- Cook for about 1 hour or until the internal temperature of the duck reaches 165 degrees Fahrenheit (74 degrees Celsius).
- Remove the duck from the oven and let it cool for about 10 minutes.
- Using a sharp knife, carefully remove the skin and cut the meat into small pieces.
- In a food processor, blend the duck meat with the heavy cream until smooth.
- Season with salt and pepper to taste.
- Place the duck pate in a serving dish
