Duck Pate

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
  2. Clean the duck and remove any excess fat.
  3. Season the duck with salt and pepper inside and out.
  4. In a large skillet, heat the olive oil over medium-high heat.
  5. Add the diced onion and minced garlic to the skillet and sauté until the onion is translucent.
  6. Stir in the dried thyme and rosemary.
  7. Add the seasoned duck to the skillet and cook until browned on all sides.
  8. Remove the duck from the skillet and place it in a roasting pan.
  9. Pour the brandy over the duck and place it in the preheated oven.
  10. Cook for about 1 hour or until the internal temperature of the duck reaches 165 degrees Fahrenheit (74 degrees Celsius).
  11. Remove the duck from the oven and let it cool for about 10 minutes.
  12. Using a sharp knife, carefully remove the skin and cut the meat into small pieces.
  13. In a food processor, blend the duck meat with the heavy cream until smooth.
  14. Season with salt and pepper to taste.
  15. Place the duck pate in a serving dish
