Duck Fat Fries

  1. Preheat oven to 425°F (218°C).
  2. Peel and cut the potatoes into thin slices, about ¼ inch thick.
  3. Rinse the potato slices in cold water to remove excess starch.
  4. Place the potato slices on a paper towel and pat them dry.
  5. In a large mixing bowl, toss the potatoes with duck fat and seasonings until evenly coated.
  6. Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes, flipping the fries halfway through, until crispy and golden brown.
  8. Remove from oven and season with salt and pepper to taste.
  9. Serve hot and enjoy your delicious homemade duck fat fries!
