Drunken Chicken
Ingredients:
- 4 chicken breasts
- 2 cloves of garlic, minced
- 1 onion, sliced
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 cup of mushrooms, sliced
- 1/4 cup of soy sauce
- 1/4 cup of honey
- 1/4 cup of rice vinegar
- 1/4 cup of brown sugar
- 1 tbsp of ginger, minced
- 1/4 cup of cooking wine
- 1/2 cup of chicken broth
- Salt and pepper to taste
- Optional: sesame seeds for garnish
Instructions:
- In a large bowl, mix together the soy sauce, honey, rice vinegar, brown sugar, ginger, and cooking wine.
- Season the chicken breasts with salt and pepper, then add them to the marinade. Cover and refrigerate for at least 30 minutes, or overnight for best results.
- In a large skillet or pan, heat some oil over medium-high heat. Add the marinated chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through.
- Remove the chicken from the pan and set aside.
- In the same pan, add the garlic, onion, and bell peppers. Cook until softened, about 2-3 minutes.
- Add the mushrooms and continue cooking for another 2-3 minutes.
- Add the chicken back into the pan with the vegetables.
