Drunken Chicken

  1. In a large bowl, mix together the soy sauce, honey, rice vinegar, brown sugar, ginger, and cooking wine.
  2. Season the chicken breasts with salt and pepper, then add them to the marinade. Cover and refrigerate for at least 30 minutes, or overnight for best results.
  3. In a large skillet or pan, heat some oil over medium-high heat. Add the marinated chicken breasts and cook for 4-5 minutes on each side, or until golden brown and cooked through.
  4. Remove the chicken from the pan and set aside.
  5. In the same pan, add the garlic, onion, and bell peppers. Cook until softened, about 2-3 minutes.
  6. Add the mushrooms and continue cooking for another 2-3 minutes.
  7. Add the chicken back into the pan with the vegetables.
