Dragonfruit Salad
Ingredients:
- 1 dragonfruit
- 1 cup strawberries, sliced
- 1/2 cup blueberries
- 1 kiwi, sliced
- 1/4 cup chopped mint
- 1/4 cup chopped almonds
- 1/4 cup honey
Instructions:
- Slice the dragonfruit in half and scoop out the flesh with a spoon.
- Cut the dragonfruit into bite-sized chunks and place in a large bowl.
- Add the sliced strawberries, blueberries, kiwi, and chopped mint to the bowl with the dragonfruit.
- In a separate small bowl, mix together the honey and chopped almonds.
- Add the honey and almond mixture to the bowl with the fruit and mix well.
- Chill in the refrigerator for 15 minutes before serving.
- Garnish with additional mint leaves if desired.
