Dragonfruit Salad

Instructions:

  1. Slice the dragonfruit in half and scoop out the flesh with a spoon.
  2. Cut the dragonfruit into bite-sized chunks and place in a large bowl.
  3. Add the sliced strawberries, blueberries, kiwi, and chopped mint to the bowl with the dragonfruit.
  4. In a separate small bowl, mix together the honey and chopped almonds.
  5. Add the honey and almond mixture to the bowl with the fruit and mix well.
  6. Chill in the refrigerator for 15 minutes before serving.
  7. Garnish with additional mint leaves if desired.
