Dill Pickle Soup
Enjoy a unique twist on traditional soup with this tangy dill pickle soup recipe.
Ingredients:
- 3 tablespoons butter
- 1 onion, diced
- 2 cloves garlic, minced
- 3 tablespoons all-purpose flour
- 3 cups chicken or vegetable broth
- 1 cup dill pickles, chopped
- 1/4 cup pickle juice
- 1 tablespoon Worcestershire sauce
- 1 cup diced potatoes
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1 cup heavy cream
- Salt and pepper to taste
- Fresh dill for garnish (optional)
Instructions:
- In a large pot, melt the butter over medium heat.
- Add the diced onions and garlic and cook until translucent.
- Sprinkle the flour over the onion mixture and stir until well combined.
- Add the chicken or vegetable broth, pickles, pickle juice, and Worcestershire sauce to the pot, stirring well.
- Add the diced potatoes, carrots, and celery to the pot and bring to a boil.
- Reduce the heat to low and simmer for 15-20 minutes until the vegetables are tender.
- Stir in the heavy cream and continue to simmer for an additional 5-10 minutes.
- Season with salt and pepper to taste.
- Serve garnished with fresh dill if desired.
