Dill Havarti Cheese

  1. In a bowl, mix together the grated Havarti cheese, fresh dill, pickling salt, and black pepper.
  2. Use a cheese cloth to wrap the mixture tightly and form into a wheel shape.
  3. Place the wrapped cheese in a press or fit it into a mold with a weight on top.
  4. Let it press for at least 6 hours, or overnight, in the refrigerator.
  5. Remove the cheese from the press and unwrap the cheese cloth.
  6. Allow the cheese to air dry at room temperature for 2-3 days, flipping the cheese halfway through the drying process.
  7. Store the dried cheese in the refrigerator for up to 2 weeks.
  8. Serve and enjoy on crackers or as a delicious addition to grilled cheese sandwiches.
