Dijon Roasted Potatoes
Ingredients:
- 2 pounds of potatoes
- ¼ cup of Dijon mustard
- 2 tablespoons of olive oil
- 1 teaspoon of dried rosemary
- 1 teaspoon of dried thyme
- 1 teaspoon of garlic powder
- Salt and pepper to taste
Instructions:
- Preheat your oven to 400°F (200°C).
- Wash and cut the potatoes into bite-sized pieces.
- In a small bowl, mix together the Dijon mustard, olive oil, dried rosemary, dried thyme, and garlic powder.
- Add the potatoes to a large mixing bowl and pour the Dijon mustard mixture over them. Toss well to evenly coat the potatoes.
- Spread the potatoes in a single layer on a baking sheet lined with parchment paper.
- Season the potatoes with salt and pepper to taste.
- Roast in the preheated oven for about 30-40 minutes, or until they are golden and crispy.
