  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the Dijon mustard, minced garlic, and honey until well combined.
  3. Season the chicken breasts with salt and pepper on both sides.
  4. Heat the olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook for about 5 minutes on each side, until golden brown.
  5. Transfer the chicken to a baking dish and brush the Dijon mustard mixture over the top of each chicken breast.
  6. Bake for 20-25 minutes, or until the chicken is cooked through and the juices run clear.
