Denver Omelette

Instructions:

  1. In a small mixing bowl, beat eggs until light and frothy.
  2. In a separate large skillet, melt 1 tablespoon of butter over medium heat.
  3. Add in the diced onions and green pepper, cooking until softened.
  4. Stir in the diced ham and cook for an additional 2-3 minutes.
  5. Remove the vegetable and ham mixture from the skillet and set aside.
  6. Using the same skillet, melt the remaining tablespoon of butter over medium high heat.
  7. Pour in the beaten eggs, letting them spread out to cover the entire skillet.
  8. Cook until eggs begin to set, then sprinkle the ham and vegetable mixture and shredded cheese on one half of the eggs.
  9. Using a spatula, fold the other half of the eggs over the filling and press down gently.
  10. Cook for an additional 2-3 minutes, or until eggs are fully cooked and cheese is melted.
  11. Season with salt and pepper to taste.
  12. Slide omelette onto a plate and serve hot.
