Date Bars
Ingredients:
- 1 cup all-purpose flour
- 1 cup rolled oats
- 1/2 cup packed brown sugar
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, softened
- 1 cup pitted dates, chopped
- 1/4 cup water
- 1/4 cup granulated sugar
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x9 inch baking dish.
- In a large bowl, mix together the flour, oats, brown sugar, baking soda, and salt. Cut in the softened butter until the mixture resembles coarse crumbs.
- Press half of the mixture into the bottom of the prepared baking dish.
- In a saucepan, combine the chopped dates, water, and granulated sugar. Cook over medium heat, stirring occasionally, until the mixture becomes thick and smooth.
- Spread the date mixture over the crust in the baking dish.
- Crumble the remaining oat mixture over the top of the date layer.
- Bake for 25 to 30 minutes, or until golden brown. Let cool before cutting into bars.
