Dark Chocolate Mousse

  1. In a small saucepan, heat the heavy cream over medium heat until it just starts to simmer.
  2. Remove from heat and add in the chopped dark chocolate. Stir until the chocolate is completely melted and the mixture is smooth.
  3. In a separate bowl, beat the eggs, sugar, and vanilla extract until well combined.
  4. Slowly pour the chocolate mixture into the egg mixture, whisking constantly, until fully combined.
  5. Pour the mixture into individual serving dishes or a large bowl, cover with plastic wrap, and refrigerate for at least 4 hours or overnight.
  6. Before serving, top with whipped cream and shaved chocolate, if desired. Enjoy!
