Dan Dan Noodles
Ingredients:
- 8 ounces dried Chinese wheat noodles
- 1/4 cup soy sauce
- 1/4 cup rice vinegar
- 2 tablespoons sesame oil
- 2 tablespoons chili paste
- 1 tablespoon brown sugar
- 1/4 cup chicken or vegetable broth
- 1 pound ground pork
- 2 cloves of garlic, minced
- 1 inch fresh ginger, grated
- 4 green onions, thinly sliced
- 1/4 cup chopped peanuts
Instructions:
- In a large pot of boiling water, cook the noodles according to package instructions. Drain and set aside.
- In a bowl, mix together the soy sauce, rice vinegar, sesame oil, chili paste, brown sugar, and broth. Set aside.
- In a large skillet, cook the ground pork over medium-high heat until browned and cooked through. Add in the garlic and ginger and cook for another minute.
- Pour the sauce mixture over the pork and stir to combine. Let it simmer for 2-3 minutes until the sauce thickens slightly.
- Add the cooked noodles to the skillet and toss to coat with the sauce.
- Serve the Dan Dan noodles in bowls and top with sliced green onions and chopped peanuts.
