Dan Dan Noodles

  1. In a large pot of boiling water, cook the noodles according to package instructions. Drain and set aside.
  2. In a bowl, mix together the soy sauce, rice vinegar, sesame oil, chili paste, brown sugar, and broth. Set aside.
  3. In a large skillet, cook the ground pork over medium-high heat until browned and cooked through. Add in the garlic and ginger and cook for another minute.
  4. Pour the sauce mixture over the pork and stir to combine. Let it simmer for 2-3 minutes until the sauce thickens slightly.
  5. Add the cooked noodles to the skillet and toss to coat with the sauce.
  6. Serve the Dan Dan noodles in bowls and top with sliced green onions and chopped peanuts.
