Dairy-Free Mac and Cheese
Ingredients:
- 1 pound of pasta (macaroni or shells work best)
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 cup of vegetable broth
- 1/2 cup of cashew milk
- 1/4 cup of nutritional yeast
- 1 teaspoon of dijon mustard
- 1/2 teaspoon of turmeric
- Salt and pepper to taste
- Bread crumbs (optional for topping)
Instructions:
- Cook the pasta according to package instructions, then drain and set aside.
- In a separate pan, heat the olive oil over medium heat and add the diced onion and minced garlic. Cook until the onion is translucent, about 5 minutes.
- Add the vegetable broth, cashew milk, nutritional yeast, dijon mustard, turmeric, salt, and pepper to the pan with the onions. Stir until well combined and bring to a simmer.
- Let the mixture cook for about 5 minutes, or until it starts to thicken.
- Add the cooked pasta to the pan and stir until the pasta is coated in the creamy sauce.
- If desired, top with bread crumbs for a crispy topping.
- Serve hot and enjoy your delicious dairy-free mac and cheese!
