Dairy-Free Ice Cream
Ingredients:
- 2 ripe bananas
- 1 can of full-fat coconut milk
- 1/4 cup of agave nectar
- 1 teaspoon of vanilla extract
- 1/4 cup of dairy-free dark chocolate chips
- Optional toppings: chopped nuts, shredded coconut, fresh fruit
Instructions:
- Peel and slice the bananas. Place them in a freezer bag or container and freeze for at least 4 hours or overnight.
- In a blender, combine the frozen bananas, coconut milk, agave nectar, and vanilla extract. Blend until smooth and creamy.
- If the mixture is too thick, add a few tablespoons of water or dairy-free milk to thin it out. If it is too thin, add more frozen banana slices until desired consistency is reached.
- Stir in the dark chocolate chips. Pour the mixture into a freezer-safe container and freeze for 2-3 hours.
- When ready to serve, let the ice cream sit at room temperature for a few minutes to soften. Scoop into bowls or cones and add desired toppings.
