Dairy-Free Chocolate Cake
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 cups granulated sugar
- 3/4 cup unsweetened cocoa powder
- 2 teaspoons baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1 cup unsweetened almond milk
- 1/2 cup vegetable oil
- 2 teaspoons white vinegar
- 2 teaspoons vanilla extract
- 1/2 cup hot coffee (can be made with instant coffee and water)
Instructions:
- Preheat your oven to 350°F (180°C) and grease a 9-inch round baking pan.
- In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In a separate bowl, mix together the almond milk, vegetable oil, vinegar, and vanilla extract.
- Add the wet mixture to the dry mixture and stir until well combined.
- Slowly pour in the hot coffee and mix until the batter is smooth.
- Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
- Let the cake cool in the pan for 10 minutes before removing it and placing it on a wire rack to cool completely.
- Once cooled, you can frost the cake with your choice of dairy-free frosting or top with dairy-free whipped cream and fresh fruit.
