  1. Preheat your oven to 350°F (180°C) and grease a 9-inch round baking pan.
  2. In a large mixing bowl, whisk together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
  3. In a separate bowl, mix together the almond milk, vegetable oil, vinegar, and vanilla extract.
  4. Add the wet mixture to the dry mixture and stir until well combined.
  5. Slowly pour in the hot coffee and mix until the batter is smooth.
  6. Pour the batter into the prepared pan and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes before removing it and placing it on a wire rack to cool completely.
  8. Once cooled, you can frost the cake with your choice of dairy-free frosting or top with dairy-free whipped cream and fresh fruit.
