Daal (Lentil Soup)
Ingredients:
- 2 cups of red lentils
- 4 cups of water
- 1 tablespoon of vegetable oil
- 1 teaspoon of cumin seeds
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tablespoon of grated ginger
- 1 teaspoon of turmeric
- 1 teaspoon of coriander powder
- 1 tomato, diced
- Salt, to taste
- Cilantro, chopped for garnish
Instructions:
- In a large pot, bring water to a boil and add the lentils. Cook the lentils for about 20 minutes or until they are soft.
- In a separate pan, heat the oil over medium heat. Add the cumin seeds and let them sizzle for a few seconds.
- Add the chopped onions and cook until they are translucent.
- Next, add the minced garlic and grated ginger to the pan. Cook for about 1 minute.
- Stir in the turmeric and coriander powder, mixing well with the onions, garlic, and ginger.
- Add the diced tomato and cook for an additional 2 minutes.
- Once the lentils are cooked, add the onion and spice mixture to the pot of lentils.
- Season with salt to taste and let the soup simmer for another 10 minutes to allow the flavors to blend together.
- Garnish with chopped cilantro before serving.
