Corn Chowder

  1. In a large pot or Dutch oven, melt butter over medium heat.
  2. Add onion and red bell pepper, cook for 5 minutes until softened.
  3. Add garlic and thyme, cook for an additional 1-2 minutes.
  4. Sprinkle flour over vegetables and stir to combine.
  5. Add broth, corn, and potatoes to the pot, stirring to combine.
  6. Bring to a boil, then reduce heat and let simmer for 25 minutes until potatoes are tender.
  7. Stir in heavy cream and let simmer for an additional 5 minutes.
  8. Season with salt and pepper to taste.
  9. Garnish with fresh chives before serving.
