Corn Chowder
Ingredients:
- 4 tablespoons unsalted butter
- 1 yellow onion, diced
- 1 red bell pepper, diced
- 3 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/4 cup all-purpose flour
- 4 cups chicken or vegetable broth
- 2 cups corn kernels (fresh or frozen)
- 2 cups diced potatoes
- 1 cup heavy cream
- Salt and pepper, to taste
- Fresh chives, for garnish
Instructions:
- In a large pot or Dutch oven, melt butter over medium heat.
- Add onion and red bell pepper, cook for 5 minutes until softened.
- Add garlic and thyme, cook for an additional 1-2 minutes.
- Sprinkle flour over vegetables and stir to combine.
- Add broth, corn, and potatoes to the pot, stirring to combine.
- Bring to a boil, then reduce heat and let simmer for 25 minutes until potatoes are tender.
- Stir in heavy cream and let simmer for an additional 5 minutes.
- Season with salt and pepper to taste.
- Garnish with fresh chives before serving.
