Conch Fritters

  1. In a large mixing bowl, combine diced conch meat, flour, cornmeal, bell pepper, onion, celery, garlic, baking powder, salt, black pepper, and cayenne pepper.
  2. In a separate small bowl, beat egg and milk together. Pour into the conch mixture and stir until well combined.
  3. In a deep frying pan, heat vegetable oil over medium-high heat.
  4. Drop spoonfuls of the conch mixture into the hot oil, making sure not to overcrowd the pan.
  5. Cook for about 5 minutes, flipping the fritters halfway through, until golden brown and crispy.
  6. Remove fritters from oil and place on paper towels to drain excess oil.
  7. Serve hot with a side of your favorite dipping sauce. Enjoy your delicious conch fritters!
