Coleslaw

  1. Remove the outer leaves of the cabbage and cut the head in half. Cut out the core and discard it.
  2. Use a sharp knife or mandoline to thinly slice the cabbage. Place it in a large bowl.
  3. Grate the carrot and add it to the bowl with the cabbage. Toss the vegetables together.
  4. In a separate small bowl, mix together the mayonnaise, apple cider vinegar, sugar, salt, and black pepper until well combined.
  5. Pour the dressing over the cabbage and carrot mixture and toss until all the vegetables are coated.
  6. Cover the bowl with plastic wrap and refrigerate for at least 1 hour before serving.
  7. Stir the coleslaw before serving and adjust seasoning to taste if needed.
