Coconut Shrimp
Ingredients:
- 1 pound large shrimp, peeled and deveined
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon salt
- 1/4 teaspoon cayenne pepper
- 1 cup coconut milk
- 1 cup shredded unsweetened coconut
- Oil for frying
Instructions:
- In a bowl, combine flour, garlic powder, onion powder, salt, and cayenne pepper. Mix well.
- In a separate bowl, pour coconut milk.
- In a third bowl, place shredded coconut.
- Dip each shrimp in the flour mixture, making sure to coat all sides.
- Next, dip the shrimp in the coconut milk and then in the shredded coconut.
- In a large pan, heat oil over medium-high heat.
- Carefully place the coated shrimp in the hot oil, cooking for about 2-3 minutes on each side or until lightly browned.
- Place cooked shrimp on a paper towel-lined plate to absorb excess oil.
- Serve hot with your favorite dipping sauce.
