Cobb Salad
Ingredients:
- 2 cups chopped romaine lettuce
- 1/2 cup cooked and cubed chicken breast
- 2 hard-boiled eggs, diced
- 2 slices cooked bacon, crumbled
- 1/4 cup diced avocado
- 1/4 cup crumbled blue cheese
- 1/4 cup diced tomatoes
- 3 tablespoons red wine vinegar
- 2 tablespoons Dijon mustard
- 1/4 cup olive oil
- Salt and pepper to taste
Instructions:
- In a large bowl, combine chopped romaine lettuce, chicken, hard-boiled eggs, bacon, avocado, blue cheese, and tomatoes.
- In a small bowl, whisk together red wine vinegar, Dijon mustard, and olive oil until well combined.
- Drizzle the dressing over the salad and toss to combine.
- Season with salt and pepper to taste.
