Classic Roast Chicken

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the salt, black pepper, garlic powder, and dried thyme.
  3. Rinse the chicken and pat it dry with paper towels.
  4. Place the chicken in a roasting pan and drizzle with olive oil.
  5. Rub the seasoning mixture all over the chicken, including inside the cavity.
  6. Place the lemon wedges inside the chicken cavity.
  7. Optionally, tie the legs of the chicken together with kitchen twine.
  8. Roast the chicken in the oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
  9. If desired, garnish with fresh herbs before serving.
