Classic Roast Chicken
Ingredients:
- 1 whole chicken (3-4 lbs)
- 2 tbsp olive oil
- 2 tsp salt
- 1 tsp black pepper
- 1 tsp garlic powder
- 1 tsp dried thyme
- 1 lemon, cut into wedges
- Fresh herbs (such as rosemary or thyme) for garnish (optional)
Instructions:
- Preheat your oven to 375°F (190°C).
- In a small bowl, mix together the salt, black pepper, garlic powder, and dried thyme.
- Rinse the chicken and pat it dry with paper towels.
- Place the chicken in a roasting pan and drizzle with olive oil.
- Rub the seasoning mixture all over the chicken, including inside the cavity.
- Place the lemon wedges inside the chicken cavity.
- Optionally, tie the legs of the chicken together with kitchen twine.
- Roast the chicken in the oven for 1 hour and 30 minutes, or until the internal temperature reaches 165°F (74°C) in the thickest part of the thigh.
- If desired, garnish with fresh herbs before serving.
