Clam Bake
Ingredients:
- 2 dozen fresh clams
- 1 pound small red potatoes, quartered
- 4 ears of corn, shucked and halved
- 1 pound smoked sausage, sliced
- 1 onion, sliced
- 4 cloves of garlic, minced
- 1 lemon, sliced
- 1/4 cup butter, melted
- Salt and pepper to taste
- 2 tablespoons Old Bay seasoning
Instructions:
- Start by preparing your fire or grill. You will want medium-high heat for this recipe.
- Clean and scrub the clams, discarding any that are cracked or opened.
- In a large pot, bring 4-6 cups of water to a boil and add in the quartered potatoes. Boil for about 10 minutes, or until tender.
- Next, add in the corn and sausage to the pot and simmer for an additional 5 minutes.
- Drain the pot and dump the contents onto a large sheet of heavy-duty aluminum foil. Spread them out evenly.
- Layer on the sliced onion, minced garlic, and lemon slices. Sprinkle with salt and pepper to taste.
- In a small bowl, mix together the melted butter and Old Bay seasoning. Drizzle this mixture over the top of the contents on the foil.
- Wrap the foil tightly around the ingredients, making a sealed packet.
- Place the foil packet onto the grill or fire, and cook for about 15 minutes, until the clams have opened and the corn is tender.
- Carefully open the foil packet and serve the delicious clam bake with melted butter and lemon
