  1. In a saucepan, combine water, butter, and salt. Bring to a boil.
  2. Remove from heat and stir in flour until the mixture forms a ball.
  3. In a separate bowl, beat eggs and vanilla together. Gradually add to the flour mixture, stirring until well combined.
  4. Heat oil in a frying pan over medium-high heat. Place churro dough into a piping bag with a star tip attachment.
  5. Pipe the dough into hot oil, cutting it off with a knife or scissors at desired length. Fry until golden brown and crispy, about 2-3 minutes per side.
  6. In a separate bowl, mix together sugar and cinnamon. Roll the cooked churros in the mixture to coat evenly.
