Chilli Crab

  1. Clean and prepare the crabs by removing the top shell and gills, and breaking them into halves.
  2. In a large wok or pan, heat the vegetable oil over medium heat.
  3. Add the chopped onions, garlic and chillies, and stir-fry until aromatic.
  4. Add the tomato paste and cook for 1-2 minutes.
  5. Pour in the stock, ketchup, soy sauce and sweet chilli sauce. Stir well.
  6. In a small bowl, mix the cornstarch with 2 tablespoons of water to make a slurry. Pour this into the sauce and stir until it thickens.
  7. Add the crab pieces to the sauce, and mix until they are coated evenly.
  8. Cover the wok or pan with a lid and let the crabs cook for 10-15 minutes, stirring occasionally.
  9. Taste and adjust seasoning with salt,
