Chicken Tortilla Soup

  1. In a large pot, heat olive oil over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
  2. Add the jalapeno and red bell pepper and cook for another 3 minutes.
  3. Add in the corn, black beans, diced tomatoes, chili powder, cumin, smoked paprika, salt, and black pepper. Stir to combine.
  4. Pour in the chicken broth and bring to a simmer. Let simmer for 10-15 minutes, stirring occasionally.
  5. Add in the shredded chicken and let cook for another 5 minutes.
  6. Serve hot, garnished with your choice of toppings.
