Chicken Tortilla Soup
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 jalapeno pepper, seeded and diced
- 1 red bell pepper, seeded and diced
- 1 cup frozen corn kernels
- 1 can black beans, drained and rinsed
- 1 can diced tomatoes
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- 1/4 teaspoon black pepper
- 4 cups chicken broth
- 1 cup shredded cooked chicken
- Toppings: shredded cheese, diced avocado, chopped cilantro, tortilla strips
Instructions:
- In a large pot, heat olive oil over medium heat. Add the onion and garlic and cook until softened, about 3 minutes.
- Add the jalapeno and red bell pepper and cook for another 3 minutes.
- Add in the corn, black beans, diced tomatoes, chili powder, cumin, smoked paprika, salt, and black pepper. Stir to combine.
- Pour in the chicken broth and bring to a simmer. Let simmer for 10-15 minutes, stirring occasionally.
- Add in the shredded chicken and let cook for another 5 minutes.
- Serve hot, garnished with your choice of toppings.
