Chicken Tetrazzini
Ingredients:
- 1 lb spaghetti
- 1/2 cup butter
- 1 onion, chopped
- 1 green bell pepper, chopped
- 2 cloves garlic, minced
- 1 lb cooked chicken, shredded or cubed
- 1 can cream of mushroom soup
- 1 cup chicken broth
- 1/2 tsp salt
- 1/4 tsp pepper
- 1/4 cup grated Parmesan cheese
- 1/4 cup bread crumbs
Instructions:
- Preheat your oven to 350°F (175°C).
- Cook spaghetti according to package instructions, then drain and set aside.
- In a large skillet, melt butter over medium heat.
- Add onion, green bell pepper, and garlic. Cook until softened, about 5 minutes.
- Add cooked chicken, cream of mushroom soup, chicken broth, salt, and pepper to the skillet. Stir well to combine.
- Simmer for 10 minutes, stirring occasionally. If the mixture seems too thick, you can add more chicken broth or water to thin it out.
- Add cooked spaghetti to the skillet and stir until well coated with the sauce.
- Pour the chicken and spaghetti mixture into a 9x13 inch baking dish.
- Sprinkle Parmesan cheese and bread crumbs over the top.
