Chicken Souvlaki
Ingredients:
- 1 lb boneless, skinless chicken breasts
- 1/4 cup olive oil
- 1/4 cup lemon juice
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 tsp dried basil
- Salt and pepper to taste
- Pita bread
- Cucumber, sliced
- Tomatoes, chopped
- Red onion, sliced
- Tzatziki sauce
Instructions:
- In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, thyme, and basil.
- Add chicken breasts to the marinade, making sure they are completely coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
- Preheat grill or grill pan over medium-high heat.
- Remove chicken from marinade and discard excess marinade.
- Season chicken with salt and pepper on both sides.
- Grill chicken for 6-8 minutes per side, or until cooked through and juices run clear.
- Remove chicken from grill and let it rest for 5 minutes before slicing into strips.
- Warm pita bread on the grill for a minute, if desired.
- Assemble souvlaki wraps by placing chicken, cucumber, tomatoes, and red onion on pita bread. Top with tzatziki sauce.
- Wrap tightly and enjoy your delicious chicken souvlaki!
