Chicken Souvlaki

  1. In a mixing bowl, combine olive oil, lemon juice, garlic, oregano, thyme, and basil.
  2. Add chicken breasts to the marinade, making sure they are completely coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat grill or grill pan over medium-high heat.
  4. Remove chicken from marinade and discard excess marinade.
  5. Season chicken with salt and pepper on both sides.
  6. Grill chicken for 6-8 minutes per side, or until cooked through and juices run clear.
  7. Remove chicken from grill and let it rest for 5 minutes before slicing into strips.
  8. Warm pita bread on the grill for a minute, if desired.
  9. Assemble souvlaki wraps by placing chicken, cucumber, tomatoes, and red onion on pita bread. Top with tzatziki sauce.
  10. Wrap tightly and enjoy your delicious chicken souvlaki!
