Chicken Schnitzel

  1. Place the chicken breasts between two sheets of plastic wrap and pound gently with a meat mallet or rolling pin until they are about 1/4 inch thick.
  2. In a shallow dish, mix together the flour, salt, pepper, garlic powder and paprika.
  3. In a separate shallow dish, beat the eggs until combined.
  4. In a third shallow dish, place the breadcrumbs.
  5. Coat each chicken breast in the flour mixture, then dip into the beaten eggs, and finally coat with the breadcrumbs, pressing lightly to help them adhere.
  6. In a large skillet, heat the vegetable oil over medium heat.
  7. Carefully add the chicken breasts to the hot oil and cook for 4-5 minutes per side, until golden brown and cooked through.
  8. Remove the chicken schnitzels from the skillet and place them on a paper towel-lined plate to drain excess oil.
  9. Serve hot and enjoy your delicious chicken schnitzel!
