- 4 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups breadcrumbs
- 1 tsp salt
- 1 tsp pepper
- 1 tsp garlic powder
- 1 tsp paprika
- 1/4 cup vegetable oil
Instructions:
- Place the chicken breasts between two sheets of plastic wrap and pound gently with a meat mallet or rolling pin until they are about 1/4 inch thick.
- In a shallow dish, mix together the flour, salt, pepper, garlic powder and paprika.
- In a separate shallow dish, beat the eggs until combined.
- In a third shallow dish, place the breadcrumbs.
- Coat each chicken breast in the flour mixture, then dip into the beaten eggs, and finally coat with the breadcrumbs, pressing lightly to help them adhere.
- In a large skillet, heat the vegetable oil over medium heat.
- Carefully add the chicken breasts to the hot oil and cook for 4-5 minutes per side, until golden brown and cooked through.
- Remove the chicken schnitzels from the skillet and place them on a paper towel-lined plate to drain excess oil.
