Chicken Satay
Ingredients:
- 1 pound boneless, skinless chicken breasts
- 1/4 cup soy sauce
- 1/4 cup brown sugar
- 1/4 cup lime juice
- 2 tablespoons vegetable oil
- 2 cloves garlic, minced
- 1 tablespoon grated ginger
- 1 teaspoon ground coriander
- 1/2 teaspoon ground turmeric
- 1/4 teaspoon cayenne pepper
- 12-15 wooden skewers, soaked in water for 30 minutes
Instructions:
- Cut chicken into thin strips and place in a large bowl.
- In a small bowl, mix together soy sauce, brown sugar, lime juice, vegetable oil, garlic, ginger, coriander, turmeric, and cayenne pepper.
- Pour the marinade over the chicken and mix well to coat all of the pieces. Cover and refrigerate for at least 1 hour, or overnight.
- Preheat grill to medium-high heat.
- Thread marinated chicken onto the skewers.
- Grill chicken skewers for 4-5 minutes on each side, until cooked through and slightly charred.
- Serve hot and enjoy your delicious chicken satay!
