Chicken Salad
Ingredients:
- 2 cups cooked and shredded chicken breast
- 1/4 cup chopped celery
- 1/4 cup chopped red onion
- 1/4 cup halved red grapes
- 1/4 cup chopped pecans
- 1/4 cup dried cranberries
- 1/2 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon honey
- Salt and pepper to taste
Instructions:
- In a large mixing bowl, combine the chicken, celery, red onion, grapes, pecans, and dried cranberries.
- In a small mixing bowl, whisk together the mayonnaise, Dijon mustard, honey, salt, and pepper.
- Pour the dressing over the chicken mixture and stir until all ingredients are evenly coated.
- Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to marinate.
- Serve the chicken salad on a bed of lettuce or in a sandwich.
