Chicken Pelau
Ingredients:
- 2 pounds chicken, cut into bite-sized pieces
- 2 cups long grain rice
- 2 tablespoons vegetable oil
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 bell pepper, chopped
- 1 cup diced tomatoes
- 1 can coconut milk (13.5 oz)
- 2 cups chicken broth
- 2 tablespoons tomato paste
- 2 teaspoons dried thyme
- 1 teaspoon paprika
- 1 teaspoon black pepper
- Salt to taste
- 1 cup green beans, trimmed and cut into 1-inch pieces
Instructions:
- In a large pot or dutch oven, heat the vegetable oil over medium-high heat.
- Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
- In the same pot, add the onions, garlic, and bell pepper. Cook until onions are translucent, about 2-3 minutes.
- Add the diced tomatoes and cook for an additional 2-3 minutes.
- Stir in the coconut milk, chicken broth, tomato paste, thyme, paprika, black pepper, and salt. Bring to a boil.
- Add the chicken back into the pot and stir to combine. Reduce heat to medium, cover, and let simmer for 20 minutes.
- After 20 minutes, add the rice and green beans to the pot. Stir to combine.
