Chicken Pelau

  1. In a large pot or dutch oven, heat the vegetable oil over medium-high heat.
  2. Add the chicken and cook until browned on all sides, about 5-7 minutes. Remove chicken and set aside.
  3. In the same pot, add the onions, garlic, and bell pepper. Cook until onions are translucent, about 2-3 minutes.
  4. Add the diced tomatoes and cook for an additional 2-3 minutes.
  5. Stir in the coconut milk, chicken broth, tomato paste, thyme, paprika, black pepper, and salt. Bring to a boil.
  6. Add the chicken back into the pot and stir to combine. Reduce heat to medium, cover, and let simmer for 20 minutes.
  7. After 20 minutes, add the rice and green beans to the pot. Stir to combine.
  8. Cover and continue to cook for an additional 20 minutes, or until the rice is fully cooked and
