Chicken Pad Thai

  1. In a large pot of boiling water, cook the rice noodles according to package instructions. Drain and set aside.
  2. In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken and cook for 5-7 minutes, until cooked through.
  3. Add the garlic and red bell pepper to the skillet with the chicken. Cook for an additional 2-3 minutes.
  4. Add the cooked noodles, bean sprouts, and green onions to the skillet. Stir until well combined and heated through.
  5. Serve the chicken pad thai on a platter or individual plates. Top with chopped peanuts, cilantro, and a squeeze of lime juice.
