Chicken Pad Thai
Ingredients:
- 8 ounces of dried rice noodles
- 1 pound of boneless, skinless chicken breast, cut into thin strips
- 3 cloves of garlic, minced
- 2 tablespoons of vegetable oil
- 1 red bell pepper, seeded and thinly sliced
- 1 cup of bean sprouts
- 4 green onions, thinly sliced
- 1/4 cup of chopped roasted peanuts
- 1/4 cup of chopped fresh cilantro
- 1 lime, cut into wedges
Instructions:
- In a large pot of boiling water, cook the rice noodles according to package instructions. Drain and set aside.
- In a large skillet, heat the vegetable oil over medium-high heat. Add the chicken and cook for 5-7 minutes, until cooked through.
- Add the garlic and red bell pepper to the skillet with the chicken. Cook for an additional 2-3 minutes.
- Add the cooked noodles, bean sprouts, and green onions to the skillet. Stir until well combined and heated through.
- Serve the chicken pad thai on a platter or individual plates. Top with chopped peanuts, cilantro, and a squeeze of lime juice.
